Campbell Soup Company Offers Recipes and Advice for Swapping

CAMDEN, N.J., Jan 20, 2011 (BUSINESS WIRE) — The time has come to share your favorite soup with friends and give a new variety of soup a try. This Saturday is National Soup Swap Day and Campbell Soup Company (NYSE:CPB) has more than 375 ideas to help heat up your soup-focused celebration. With loads of tasty recipes for homemade soup and more than 200 soup varieties on the shelf, Campbell has a solution for every palate and culinary skill (or lack thereof) for this annual occasion.


National Soup Swap Day was founded in 2006 to bring friends and soup lovers together to trade their favorite broth, chowder or consommé. The concept is simple: partygoers bring six one-quart containers of soup to trade, freeze and enjoy throughout the winter.


“Although homemade soup is at the heart of this soup-focused celebration, a lack of time or culinary skill shouldn’t keep anyone from participating,” said Thomas Griffiths, Certified Master Chef and Director of Campbell’s Culinary & Baking Institute. “Campbell has plenty of quick and easy recipes that can be found on our Campbell’s Kitchen web site, as well as tasty prepared soups that are amazingly flexible and sure to please.”

Chef Griffiths’ Recipe for Italian-style Vegetable Soup


Prep Time: 15 minutes


Cooking Time: 30 minutes


Yield: 6 portions


Ingredients:

Soffritto
1 Tbsp Olive oil
1 Tbsp Garlic, minced

2 each

Carrot, peeled, small dice (about ½ Cup)
3 stalks Celery, peeled, small dice (about ½ Cup)

1 small


Onion, peeled, small dice (about 1/3 Cup)

To taste Sea Salt
To taste Crushed Black Pepper
1 link Italian sausage, cooked and diced (about ½ Cup)

1 each

Red bell pepper, small dice (about ½ Cup)

1 small


Green Zucchini, small dice (about ½ Cup)


6 each

Green Beans, sliced on the bias (about ½ Cup)

1 container


V8(R) Tomato Herb Soup (18.3 oz)

6 oz

Swanson Chicken Cooking Stock, low sodium

6 oz Water

Pepperidge Farm Croutons

Parmigiano cheese

























Method

1. Heat a heavy sauce pot for about one minute, add the oil to heat.

2. Immediately add the soffritto ingredients of garlic, carrot, celery and onion stirring with a wooden spoon. Cook gently for 3 minutes without developing color. Season to taste. This is a very common way to develop great flavor by “sweetening the pot”. Note: In French cooking we call a soffritto a mirepoix.

3. Add the sausage, red bell pepper, zucchini, green beans and potato and continue to stir for 3 minutes further.

4. Add one container of V8(R) Tomato Herb Soup and 6 oz Swanson Chicken Cooking Stock. Simmer for 15 minutes, ladle over Pepperidge Farm croutons and garnish to taste with grated, Parmigiano cheese. Enjoy.
